      The Recipe of Roast Cauliflower Salad

      Ingredients:

      • 1 cauliflower head
      • 1 tsp minced garlic
      • 1 tsp paprika powder
      • 1 tsp mustard powder
      • 1 cup cooked brown rice
      • Mixed lettuce
      • 1/2 avocado, sliced
      • 1 cup chopped tomato
      • 1/2 cup feta cheese
      • 1/3 cup chopped almonds
      • 2 tbsp olive oil
      • 2 tbsp balsamic vinegar
      • 1 tsp honey

      Method:

      1. Dress cauliflower in minced garlic, paprika, and mustard powder and toss
      2. Roast cauliflower in the oven for ~30 minutes or ~15 minutes in the air fryer at 190oC
      3. Set aside to cool
      4. Assemble salad by tossing lettuce, rice, avocado, tomato, feta, and almonds together in a salad bowl
      5. Toss in the cauliflower
      6. Dress with olive oil, balsamic vinegar, lemon juice and honey
