The Recipe of Roast Cauliflower Salad
1 cauliflower head
1 tsp minced garlic
1 tsp paprika powder
1 tsp mustard powder
1 cup cooked brown rice
1/2 avocado, sliced
1 cup chopped tomato
1/2 cup feta cheese
1/3 cup chopped almonds
2 tbsp olive oil
2 tbsp balsamic vinegar
1 tsp honey
Dress cauliflower in minced garlic, paprika, and mustard powder and toss
Roast cauliflower in the oven for ~30 minutes or ~15 minutes in the air fryer at 190oC
Set aside to cool
Assemble salad by tossing lettuce, rice, avocado, tomato, feta, and almonds together in a salad bowl
Toss in the cauliflower
Dress with olive oil, balsamic vinegar, lemon juice and honey
